Nest 3. Change of temperature for manual Mau

I have a nest 3 and when i press manual on heat link then it goes up to set temp of 27. Can i change this to a lower temperature?

Decouple thermostat from the heating

Hi community can someone explain to me how to decouple a nest learning thermostat from the heating? My Wi-Fi chip has died and whilst I wait for a replacement thermostat I’d ideally not like to freeze, but rather control the heating manually. Thanks!
